Chicken Chimichangas

My friend is a cook. What do I mean? She makes dinner every night. Not opening a box but makes dinner. I love these and the kids will eat them. I will give you the recipe as I got it and then tell you what I do.

2 1/2 cup chopped chicken 1/2 tsp oregano
2/3 cup salsa 1/2 tsp salt
1/3 green onion, minced 8 flour tortillas
3/4 - 1 tsp cumin 1/4 cup shredded cheese

Combine chicken, salsa, cumin, oregano and salt in bow. Spoon about 1/3 cup of chicken mixture onto center of tortilla, you must microwave tortilla to make it roll able, I do 12 seconds. Top with 2 Tbs. cheese. Fold and place seam-side down in 9 x 13 inch pan. Brush tops with melted butter. Bake in preheated oven at 475 for about 13 minutes or until golden brown. Top with guacamole, sour cream, etc.


I put in 1/2 tsp of cumin because it can be a little powerful to me. I also use more cheese because I LOVE it. Today I didn't have green onions so we are going without. I try to have some mild salsa on hand for this recipe because the kiddos can't handle the heat. Today I only have medium so we are having milk with dinner.

Get Up!

I would describe myself as more of a jeans and t-shirt kind of gal. Emmy is more of a crazy, whatever inspires her kind of dresser. The pink glasses are her "spy glasses". She is constantly coming up with the craziest of outfits and her are few of the most recent ones.

Dancing Queen

At Christmas Emmy's dance class does a little performance for the parents. I love Lulu in her little dance outfit. She is a little bossy but we are working on it.









I was having camera issues, like turn off the flash so it doesn't show up in every picture!

Blue and Gold

Does your pack do this? It is "tradition" that the dads and boys make a cake together. Or in our family it means mom makes the cake with all three kids and dad carries it into the pack meeting. Ethan decided on a map of the united states. We took fondant and cut out all fifty states in a colorful map. It didn't take as long as I thought it would but still won't do it again. That is until next year when we get some other crazy cake idea.

12 Years and Counting.

My sweet captain and I have been married 12 years now. Wow! Crazy! Can't wait to see what the next 12 bring us! Look how ittle Scotty's face looks! Look at the size of my veil.

Ethan's 9

and he has been for a couple months now but I have been an awful blogger. He still loves legos and pokemon so they were both big hits at the party. We took him and "the buddy squad" to see Bolt. Ethan requested a bunt cake, my favorite too. He is my mark of time. Seeing him turn into a little man makes me start to feel old and hopeful I am being a good parent. I also wish the pantry door was shut so you didn't have to see the crazineess.
